Christmas is Green this year by Natural Nailah

For those of you who are or working towards eating healthier, Xmas can be a challenging time, what with oily roast potatoes, a myriad of meats on display,
deep fried food and not to mention all the booze!!
As someone who does not eat meat, I’ve always found Xmas dinner around a family of meat eaters rather harrowing, I was the butt of many a joke inferring that somehow I was ‘missing out’ As not to cause a fuss, my plate usually consisted of rice and peas, a myriad of overcooked vegetable and a blob of coleslaw.
This year I’m shaking things up a little, Xmas is going Green!! Christmas is Green this year by Natural Nailah Coconut Quinoa & Green Beans A spin on rice and peas except using the healthy and nutritious grain Quinoa and good green beans.

Coconut Quinoa & Green Beans

Ingredients

  • 1 cup of Quinoa
  • 1 bunch of green beans
  • Coconut cream
  • Seasoning
    Preparation
  • Empty the pack of Quinoa into a
    medium size pot
  • Wash the Quinoa thoroughly and drain
  • Add boiling water just over the Quinoa
  • Add to the stove (medium heat)
  • Quinoa steams and should be cooked in
    1O minutes
  • After 5 minutes melt the coconut cream
    and add it to the pot of Quinoa
  • You can season to taste with onions,
    bayleaf or Paprika or seasoning of your
    choice
  • Steam the green beans ensuring you
    cut off the stems
  • Once steamed for 5 minutes, cut the
    beans very finely.
  • Add the beans to the Quinoa – mix in

Ingredients

  • Parsley
  • Negro Kale
  • Cauliflower
  • Fresh Cherry tomato
  • Lemon, cut fine lemon juice
  • 1 x spring onion
  • Dill
    Preparation
  • Wash and cut the Parsley, Negro Kale
    finely
  • Wash and grater quarter of a Cauliflower
  • Dice the onions and tomato
  • Mix the ingredients together
  • Add Lemon juice and seasoning to your
    taste
  • Garnesh with chopped green and yellow
    peppers and a hint finely chopped mint
