Preparation time 20 minutes. Serves 8
2 tablespoons lime juice
2 teaspoons dark brown sugar
1 teaspoon finely grated lime rind
1 medium green papaya (1kg) seeded, chopped finely
2 tablespoons finely chopped fresh coriander leaves
1 fresh red chilli pepper, seeded chopped finely
1 medium red onion (170g) chopped finely
1 tablespoon olive oil
Place in large bowl add sugar, stir until sugar is dissolved.
Add remaining ingredients, stir well. Cover, refrigerate until cold.
Serve salsa with most dishes and as a starter.
